The restaurant formerly known as Waterfront Seafood Grill has a new name, a new paint job, and a new spark. Introducing… AQUA by El Gaucho.

For the past 11 years, El Gaucho’s seafood concept was known as “Seattle’s hidden jewel.” Albeit great success, the time has come to uncover that jewel and reintroduce AQUA as part of the family.

Who better to explain the reason behind this change than Paul Mackay himself? Watch below as he explains in his own words.

Our loyal “Waterfront” fans can rest assured the core of this restaurant hasn’t change. You will still chat with the same team, enjoy many of the same menu favorites, and soak in the same breathtaking, panoramic view.
